Veggie Sandwich with Carrot Hummus and Tatsoi

We make a delicious carrot hummus from chickpeas and top a sandwich with Tatsoi, avocado, cucumber and sprouts.

  • 4 slices of toast
  • 140 g chickpeas
  • 10 g Tahin (Sesame paste)
  • 20 g sprouts
  • 1 Seedbar Tatsoi
  • 1 avocado
  • 4 carrots
  • 1/2 cucumber
  • 1/2 lemon
  • 2 tbsp olive oil
  • 1/4 tsp chilli flakes
  • 1/2 tsp ground cumin
  • Salt & pepper

Step 1

Preheat the oven to 180°C (fan oven) or 200°C (top/bottom heat, recommended).

Step 2

Wash the carrots, peel and slice as desired.

Step 3

Place the carrots on a baking tray covered with baking paper. Drizzle with oil, salt, pepper and mix well. Bake for approx. 15 min.

Step 4

In the meantime, harvest the Tatsoi and cut the avocado in half, remove the stone, peel and slice.

Step 5

Wash and slice the cucumber. Cut the lemon in half and squeeze out the juice.

Step 6

Remove the carrots from the oven and mix with the chickpeas and tahini.

Step 7

Add the oil, flavour with salt, pepper, chilli flakes and cumin and mix again.

Step 8

Toast the bread in a toaster or pan. Then cover with carrot hummus, top with Tatsoi, avocado, cucumber and sprouts and serve.
