Farfalle with Kale and Almond Pesto

Pasta with pesto is always good! But why not try a different pesto? Kale is perfect for this and, together with the almonds, makes an excellent pasta garnish.

  • 200 g Farfalle pasta
  • 1 Seedbar Kale
  • 60 g almonds
  • 30 g Parmesan cheese
  • 1/2 clove garlic
  • 3 tbsp olive oil
  • 1/2 lemon
  • Salt & pepper

Step 1

Cook the pasta according to the instructions on the package.

Step 2

In the meantime, roughly chop the almonds and roast in a pan without oil until golden brown.

Step 3

Wash the lemon thoroughly and grate the zest. Then cut in half and squeeze out the juice.

Step 4

Grate the Parmesan cheese.

Step 5

Blend the kale, Parmesan, garlic, lemon zest and juice, olive oil and 2/3 of the roasted almonds in a blender. Season with salt and pepper.

Step 6

Add the pesto to the pasta and mix well.

Step 7

Serve the pasta with the remaining almonds and grate some Parmesan over the pasta if desired.
