Avocado Spread with Coriander

As a creamy spread on bread or as a tasty side dish along with grilled meat and vegetables - fresh lemony coriander refines your new favourite avocado spread.

  • 1/2 Seedbar Coriander or 1/2 Seedbar Rucola
  • 1 ripe avocado
  • 1 tbsp lime juice
  • 2 tbsp low-fat quark or yoghurt
  • 1 tbsp olive oil
  • Salt & pepper

Step 1

Cut the avocado in half lengthwise, remove the pit, scoop out the flesh with a spoon and put it in a bowl.

Step 2

Add the lime juice and mash everything with a fork.

Step 3

Mix in the quark and olive oil and flavour with salt and pepper.

Schritt 4

Harvest the coriander (or rucola), chop and add to the cream. If desired, save a few leaves for garnishing. The spread will stay fresh in the fridge for 1-2 days.

Tip: Of course, many of our other greens also go well here and can be chosen according to taste. For example, you can also use Curly Parsley, Micro Daikon Radish or Watercress. These also taste great in the spread!
