Tagliatelle with courgette, Basil & goat's cheese sauce

If that's not absolute feel-good food that still includes a portion of vegetables. Aromatic Basil is a must-have as it rounds up this dish!

  • 200 g tagliatelle noodles
  • 2 courgettes
  • 1 Seedbar Basil
  • 60 g goat cheese
  • 1 onion
  • 30 g parmesan cheese
  • 1/2 tsp chilli flakes
  • 2 tbsp olive oil
  • Salt & pepper

Step 1

Heat the water in a large pot. Pour in the salt and cook the tagliatelle according to the package instructions.

Step 2

Peel and dice the onion. Wash the courgettes, cut into quarters lengthwise and also dice.

Step 3

Heat the oil in a pan and sauté the onions for approx. 3 minutes. Add the courgettes to the pan and sauté for approx. another 3 minutes. Add salt & pepper to taste.

Step 4

Harvest the Basil. Pour the courgettes into a tall container. Add the chilli flakes and Basil leaves and puree everything with a hand blender.

Step 5

Put the courgette sauce back into a pot or pan to heat up. Add the goat's cream cheese and mix well.

Step 6

Grate the parmesan. Mix the pasta with the courgette sauce and parmesan. Sprinkle with a little Basil and parmesan before serving.
