Soba noodles with broccoli & Pak Choi

Admittedly, a few different ingredients are needed here - but it's definitely worth going to the Asian supermarket for this recipe. See for yourself!

Ingredients

  • 120 g buckwheat noodles
  • 1 Seedbar Pak Choi
  • 1/2 broccoli
  • 2 cloves of garlic
  • Salt & pepper

For the sauce:

  • 1/2 lime
  • 2 tbsp peanut oil
  • 2 tsp roasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp Thai chili sauce (Sriracha)
  • 2 tbsp soy sauce
  • 1 Red Chili or 1/4 tsp chili flakes

For the topping:

  • 10 g sesame seeds

Step 1

Peel and finely dice the garlic. Wash the broccoli and cut into small florets.

Step 3

Heat the peanut oil in a large frying pan. Sauté the broccoli and garlic over medium heat until the vegetables soften.

Step 4

Cook the noodles according to the package instructions. Drain and rinse with cold water.

Step 5

Harvest Red Chili and chop finely. Cut the lime in half and squeeze out the juice. Whisk it together with Thai chili sauce, sesame oil, vinegar, soy sauce, maple syrup and chopped Chili or chili flakes.

Step 7

Add the broccoli to the noodles along with the garlic. Harvest the Pak Choi and mix in as well. Pour the dressing over and serve with sesame seeds.
