Peel and finely dice the garlic. Wash the broccoli and cut into small florets.
Heat the peanut oil in a large frying pan. Sauté the broccoli and garlic over medium heat until the vegetables soften.
Cook the noodles according to the package instructions. Drain and rinse with cold water.
Cut the lime in half and squeeze out the juice. Whisk it together with Thai chilli sauce, sesame oil, vinegar, soy sauce, maple syrup and chilli flakes.
Add the broccoli to the noodles along with the garlic. Harvest the Pak Choi and mix in as well. Pour the dressing over and serve with sesame seeds.
