Kale, couscous & feta one-pot

Kale has been celebrated as a superfood in the USA for years. It's time we became addicted to Kale too! This one-pot recipe combines the healthy Green with delicious couscous, Mediterranean feta as well as nutty walnuts and pine nuts. Bon Appétit!

  • 150 g couscous
  • 2 Seedbars Kale
  • 50 g feta
  • 30 g pine nuts
  • 30 g walnut kernels
  • 2 spring onions
  • 1 lemon
  • 30 ml vegetable broth
  • 1 tbsp walnut oil
  • Salt & pepper

Step 1

Roughly chop the walnuts. Roast together with pine nuts in a hot pan without oil until golden brown.

Step 2

Harvest the Kale and chop finely. Boil the vegetable broth in a pan.

Step 3

Turn off the heat, add Kale and couscous to the pan and cover.

Step 4

Wash the lemon, grate the rind and squeeze out the juice. Wash and slice the spring onion.

Step 6

In a large bowl, add half of the lemon juice, lemon rind, spring onions, pine nuts, walnuts, feta and walnut oil. Mix together.

Step 7

Mix the couscous with a fork and add to the bowl. Flavour with salt & pepper. If necessary, add the remaining lemon juice. Sprinkle with feta and enjoy.
