Green Goddess Salad with Romaine Lettuce and Herbs

This salad is an absolute food trend in social media. And rightly so! The combination of Romaine Lettuce, lots of green vegetables and Herbs is not only super tasty, but also healthy and can be prepared in no time.

For the salad:

  • 2 Seedbars Romaine Lettuce
  • 1/2 small Chinese cabbage
  • 1 small broccoli (without stalk)
  • 1 fennel bulb
  • 1 small kohlrabi
  • 1 green apple
  • 2 spring onions

For the dressing:

  • 2 Seedbars Herbs, e.g. Dill, Curly Parsley and/or Coriander
  • 30 g pumpkin seeds
  • 1 lime or lemon
  • 1 small organic ginger
  • 1/2 shallot
  • 1 clove of garlic
  • 50 ml apple cider vinegar
  • 20-40 ml olive oil
  • 1/2 EL apple sweetener or maple syrup
  • 150 ml water
  • Salt & pepper

For the topping (as you like):

  • 50 g (vegan) feta
  • 100 g vegan chicken
  • Some hemp seeds
  • Some pumpkin seeds

Step 1

Harvest Romaine Lettuce. Wash all vegetables. Then cut Chinese cabbage and broccoli into small cubes. Finely grate fennel , kohlrabi and apple. Then cut the spring onion into thin rings. Combine all ingredients in a bowl.

Step 2

For the dressing peel shallot and garlic. Squeeze the lemon or lime. Harvest Herbs of your choice. Then purée all ingredients together in a blender. Season with salt and pepper.

Step 3

Depending on your topping preference, fry vegan chicken and/or crumble feta.

Step 4

Pour dressing over the salad, mix well, serve with your favourite toppings and enjoy.
