Ingredients

  • 100 g glass noodles
  • 1 Seedbar Tatsoi
  • 1 small carrot
  • 1 small spring onion

For the dressing:

  • 1 lime (juice)
  • 1 small chilli
  • 1 clove of garlic
  • 1 small piece of ginger (ca. 1 cm)
  • 2 tbsp vegetable or peanut oil
  • 3 tbsp soy sauce
  • Honey or agave syrup
  • Salt & pepper

For the topping:

  • Peanuts or cashews

Step 1

Prepare the glass noodles according to the package instructions. In most cases, they only need to stand in the boiling water for about 5 minutes.

Step 2

Peel the carrot and cut into fine strips. Cut the spring onion into thin rings.

Step 3

Harvest the Tatsoi and place in a large bowl with the carrot, spring onion and slightly cooled glass noodles.

Step 4

For the dressing, finely chop the chilli, garlic and ginger. Squeeze the lime. Mix the soy sauce well with the lime juice, honey or agave syrup, oil, chilli, ginger and garlic. Flavour with salt & pepper to taste.

Step 5

Pour the dressing over the salad. Mix well and enjoy. If you like, you can add a few peanuts or cashews on top.
