Tatsoi has a subtle nutty and spicy flavour. Similar to Pak Choi, it goes very well with Asian dishes - just like this glass noodle salad. An easy and super quick recipe!

Prepare the glass noodles according to the package instructions. In most cases, they only need to stand in the boiling water for about 5 minutes.
Peel the carrot and cut into fine strips. Cut the spring onion into thin rings.
Harvest the Tatsoi and place in a large bowl with the carrot, spring onion and slightly cooled glass noodles. Harvest the Chili.
For the dressing, finely chop the Chili, garlic and ginger. Squeeze the lime. Mix the soy sauce well with the lime juice, honey or agave syrup, oil, Chili, ginger and garlic. Flavour with salt & pepper to taste.
Pour the dressing over the salad. Mix well and enjoy. If you like, you can add a few peanuts or cashews on top.
