Farfalle with Kale and almond pesto

Pasta with pesto is always good! But why not try a different pesto? Kale is perfect for this and, together with the almonds, makes an excellent pasta garnish.

Ingredients

  • 200 g farfalle pasta
  • 1 Seedbar Kale
  • 60 g almonds
  • 30 g parmesan cheese
  • 1/2 clove of garlic
  • 1/2 lemon
  • 3 tbsp olive oil
  • Salt & pepper

Step 1

Cook the pasta according to the package instructions.

Step 2

In the meantime, roughly chop the almonds and roast in a pan without oil until golden brown.

Step 3

Wash the lemon thoroughly and grate the zest. Then cut in half and squeeze out the juice.

Step 4

Grate the parmesan cheese. Harvest Kale.

Step 5

Blend the Kale, parmesan, garlic, lemon zest and juice, olive oil and 2/3 of the roasted almonds in a blender. Season with salt & pepper.

Step 6

Add the pesto to the pasta and mix well. Serve the pasta with the remaining almonds and grate some parmesan over the pasta if desired.
