Courgette salad with Lemon Basil and feta

Light, fresh and prepared in no time! The fine courgette slices go wonderfully with the intense flavour of the Lemon Basil.

For the salad:

  • 650-700 g yellow and green courgettes
  • 1 Seedbar Lemon Basil contained in the Seedbundles Night Time, Awaken Senses or Inner Peace
  • 70 g (vegan) feta crumbled
  • 2 tbsp peeled hemp seeds
  • Optional: Fine chilli rings

For the dressing:

  • 1/2 Seedbar Basil
  • 10 g marjoram
  • 1/2 lemon
  • 20 ml olive oil
  • 2 tsp Dijon mustard
  • 1 tsp maple syrup
  • Some onion stock
  • Salt & pepper

For the pickled onion:

  • 20 g white onion
  • 50 ml apple cider vinegar
  • 1/2 tsp salt
  • Some fresh marjoram
  • 120 ml hot water

Step 1

Finely chop the onions and mix with apple cider vinegar, salt, marjoram and hot water in a small bowl. Leave to infuse.

Step 2

Squeeze the lemon and grate the zest. Then harvest the Basil. Mix all the dressing ingredients, except the oil, in a small bowl. Slowly drizzle in the olive oil until the dressing has a velvety texture. Season to taste with salt and pepper.

Step 3

Harvest the Lemon Basil. Slice the courgettes finely or chop them finely with a slicer. Place in a bowl with the feta, hemp seeds, Lemon Basil as well as chilli and mix. Serve on a plate with dressing and pickled onions.

Tip: Tastes especially good with crusty bread, pizza or pasta.
