Light, fresh and prepared in no time! The fine courgette slices go wonderfully with the intense flavour of the Basil Lemon.
For the salad:

Finely chop the onions and mix with apple cider vinegar, salt, marjoram and hot water in a small bowl. Leave to infuse.
Squeeze the lemon and grate the zest. Then harvest the Basil. Mix all the dressing ingredients, except the oil, in a small bowl. Slowly drizzle in the olive oil until the dressing has a velvety texture. Season to taste with salt and pepper.
Harvest the Basil Lemon. Slice the courgettes finely or chop them finely with a slicer. Place in a bowl with the feta, hemp seeds, Basil Lemon as well as chilli and mix. Serve on a plate with dressing and pickled onions.
Tip: Tastes especially good with crusty bread, pizza or pasta.
