Avocado spread with Coriander

As a creamy spread on bread or as a tasty side dish along with grilled vegetables - fresh lemony Coriander refines your new favourite avocado spread.

Ingredients

  • 1/2 Seedbar Coriander or 1/2 Seedbar Rucola
  • 1 ripe avocado
  • 2 tbsp low-fat quark or yoghurt
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt & pepper

Step 1

Cut the avocado in half lengthwise, remove the pit, scoop out the flesh with a spoon and put it in a bowl. Add the lime juice and mash everything with a fork.

Step 3

Mix in the quark and olive oil and flavour with salt & pepper.

Schritt 4

Harvest the Coriander (or Rucola), chop and add to the cream. If desired, save a few leaves for garnishing. The spread will stay fresh in the fridge for 1-2 days.

Tip: Of course, many of our other Greens also go well here and can be chosen according to taste. We recommend Curly Parsley, Micro Daikon Radish or Watercress.
